It’s a Monday, things are dragging and the last thing you want to do is wake-up earlier than you have to to make breakfast, I hear ya. I’ve been there. That’s when I concocted this lovely gem of a breakfast up– and I ate it for two weeks straight. Every. Single. Breakfast. Until I ran out of granola…then I got sad.
What I love most about this breakfast is it’s so simple! All you need is your favorite yogurt (I like vanilla or plain greek), granola of your choice, a fruit of your liking and peanut butter. And who doesn’t love some peanut butter? Wanna hear one of the best parts of this lovely breakfast? It can be made vegan! That’s right folks, vegan. Just choose soy yogurt and make sure your granola doesn’t contain nuts or milk ingredients. Since it’s slowly turning into fall, I recommend: Nature’s Path Organic Pumpkin Flax Granola…can you say, yum? There’s also tons of other scrumptious options at Sprouts that you can purchase in bulk!
My personal advice? Scoop the peanut butter last and then use the same spoon to eat the rest with…you get more of the peanut buttery goodness in that way.
